Turn Your Left Over Rice Into Tasty Chinese Fried Rice

Turn your leftover white rice into the best fried rice you ever had! Fried rice is one of my favorite Chinese dishes. Shrimp, beef or chicken, I love them all. When I go out for Chinese food, I always take all of the leftover white rice back home for making fried rice that lasts me several days.

It's simple to make, but you must have the right ingredients to make it taste like you bought it at your favorite Chinese restaurant. Here's what you need:

2 - 4 cups of cooked leftover white rice
1 - 2 eggs
2 - 3 garlic cloves chopped
2 - 4 tablespoons of Kikkoman Soy Sauce
2 - 3 teaspoons of Sesame oil
1 - package of frozen peas (optional peas & carrots)
3 - tablespoons of Peanut oil or Olive oil ( I always use olive oil because it is healthier but peanut oil is preferred in Chinese cooking because of its high burning temperature.)

A hand full of chopped fresh shrimp, chicken or beef chopped

This first step took me a long time to learn, but it is the most important part of the entire recipe. Beat your eggs as if you were going to make scramble eggs.

I use an old wok that I got at a garage sale but you can use any good frying pan. Place 1 tablespoon of oil into your pan and heat the pan to high. Before the oil starts to smoke throw in your eggs and beat until they are over cooked and start breaking apart into smaller pieces. Remove your eggs from the wok and place them into a container for later.

Now add 1-2 tablespoons of oil and ½ the chopped garlic. Everything should happen fast if you have your heat on high so be fast. Throw your shrimp or meat in the wok and stir fry for a few minutes until cooked and then remove from the wok and place into the container with the eggs.

Now add the rest of the oil and 1-2 teaspoons of sesame oil. Add all the remaining chopped garlic and a handful of frozen green peas. Stir fry for a minute then add the white rice and stir fry for another few minutes. Add all the ingredients that you put aside in the container and start putting in soy sauce as you continue to stir fry.

Taste it as you go along and you may want to add more soy sauce or sesame oil. Enjoy!

I spent two years in Japan and loved the way they served and presented fried rice to you in a restaurant. Here is this presentation trick I learned while in Japan.

Get a nice shaped Chinese or Japanese soup bowl and pack down your fried rice in a bowl. Place a flat serving dish on top of the bowl and now place your hand on top of the flat dish while turning the dish upside down. Put into the microwave for a few minutes with the bowl still on the rice.

When you take the fried rice out of the microwave remove the bowl and you have a nice shaped mound of fried rice ready to be served.

Parmesan Crusted Sole with Lemon Beurre Blanc

Sole/flounder is a refreshing sweet and mild flavored fish which allows it to be used in a variety of ways. With its long thin flesh, sole is often stuffed or used in other extravagant plate presentations. Because this fish is very thin it's a great choice to pan fry for a quick meal. Parmesan crusted sole is the best of both worlds, it's eloquent and fast. You can make it look even better with some fresh chives, tarragon or basil. Even if you don't like fish, you'll love this recipe.

Serves 4

4 ea. Sole fillet (6-8 oz) - if the fillets are small use 2 per serving 1 ½ cups Panko (Japanese bread crumbs) ½ cup Grated parmesan cheese 4 Tbsp. Parsley - minced ½ tsp. Granulated garlic ¼ tsp. Kosher salt ½ tsp. Pepper ½ cup Flour - all purpose 3 ea. Eggs 1 cup Milk 4 Tbsp. Butter 4 Tbsp. Olive oil 1 cup Lemon beurre blanc

In a food processor blend panko, parmesan and parsley until fine. Transfer to a shallow pan. In a separate pan whip eggs and milk until well combined. In a third pan place the flour.

Take the sole fillets and season with salt, pepper and granulated garlic. Dredge sole in flour, then egg wash and finally in the parmesan/panko mix. Pat the parmesan and panko into the sole until the mix sticks to the fish.

In a large sauté pan heat butter and olive oil until hot. Carefully place sole in the pan and shake the pan to make sure the fish doesn't stick. When sole is golden brown, flip over and continue to cook. When sole is done (120° F internally), transfer to plate and top with lemon beurre blanc.

Lemon Beurre Blanc

Yields 1 cup

1 cup White wine 1 Tbsp. White wine vinegar 1 Tbsp. Shallots 4 Tbsp. Heavy whipping cream ¼ lb Butter - unsalted, chilled, cut into cubes 2 Tbsp. Lemon pulp - chopped (see note) 1 tsp. Lemon zest - minced 1/8 tsp. Kosher salt 1/8 tsp. White pepper

In a sauce pan over medium high heat, combine wine, vinegar and shallots. Reduce until almost a syrup consistency. Add cream and continue to cook reducing by half. Turn the heat to low and add butter cubes 2 at a time while stirring until all the butter is added and sauce is a creamy consistency. Season with salt and pepper.

Note: If the butter is not chilled it will not incorporate into the sauce. Also if the wine mixture is not reduced far enough the sauce will be runny.

Note: To make the lemon pulp, cut off the rind including the white part. Cut between the sections removing just the pulp. At the same time removing any seeds. Place the pulp and any juice in a cup. It is also a good idea to zest the lemon first.

Indian Style (Egg) French Toast Recipe

French Toast is an easy and quick snacks that tastes delicious (of course it's delicious, it's fried!). This can be a heavy breakfast and if you eat too many in the evening can serve as dinner as well. You can make this item even more distinctive by adding chat masala / pepper / amchur (grounded mango powder) /etc.

1 small size onion 2-3 green chili 1 inch ginger 1/2 teaspoon black pepper 2 eggs 4 bread slices Vegetable oil Salt

Preparation time: 5 mins

Cooking time: 10 mins

Serves: 2

Steps

1. Chop 1 small size onion, 2-3 green chili, 1 inch ginger and put it in a bowl.
2. Put salt to taste, 1/2 teaspoon black pepper into the bowl (step 1) and mix well.
3. In another bowl break 2 eggs and put it into the bowl and beat the eggs properly.
4. Put all the contents of (step 1 & 2) into the bowl (step 3) and mix well.
5. Take a non-stick pan heat 2 teaspoon of vegetable oil and put 4 bread slices into the tawa (shallow frying pan).
6. Put the mixed content (step 4) over on one side of bread slices and spread them with spoon and put that side upside down on the non-stick pan and fry till the one side is semi-cooked. While it is getting cooked, put another layer of mixture (step 4) on the top side and spread with spoon.
7. Then turn the bread upside down and semi-cook the other side as well.
8. Finally keep on flipping the sides of the bread till both sides are fully cooked, brown and crispy (up to your choice of the amount of crispness).

Garnish with black salt powder.

French Toast is ready to serve hot with tomato sauce for breakfast or evening snacks. You can also serve this with grated cucumber with lemon, salt and pepper for added coolness.

Silogs, popular term for sinangag (fried rice) and itlog (egg), are certainly every Pinoy's favorite morning meal. Because of its popularity, you can even consider it the national breakfast of the Philippines, if there is such a thing.

These early morning delights come in several combinations with tapsilog (with tapa), tocilog (with tocino) and longsilog (with longanisa or Filipino sausage) topping the list. There are still many variations of silogs like cornsilog (with corned beef), chiksilog (with chicken), chosilog (with adobo), dangsilog (with danggit or rabbitfish), bangsilog (with bangus or milkfish), hotsilog (with hotdog) and many more.

But for this recipe, we are going to prepare a combination of longanisa or the famous Pinoy sausage, sinangag or the savory garlic fried rice and eggs. Yummy! My mouth is already watering just thinking of it.

Ingredients:
5 links of longanisa sausage 3 eggs 4 cups of left over rice from the previous night 1 cup of water for cooking longanisa ¼ tbsp ground black pepper 2 cloves of garlic oil for frying ½ tbsp salt ¼ tbsp MSG Cooking Procedure:
To cook the longanisa sausage, place the longanisa in a frying pan together with the water and place under medium heat until it comes to a boil. Allow the water to evaporate totally until oil starts to ooze from the sausage links. To cook evenly, constantly roll the sausage links and fry for about 5 minutes. For the eggs, beat two eggs like the way you prepare an omelet. Add a pinch of salt to taste then cook in a frying pan. Take out from the pan then set aside. Get another egg and for the sunny side up. Cook using the same pan. Take out when done and set aside. For the garlic fried rice, break the rice up especially the big chunks and set aside. Put oil in a heated pan and cook the garlic until the color turns golden brown and the aroma is wafting in the air. Add the rice and stir for about 1 minute. Add the MSG, salt and pepper for added flavor. Cook for another 5 minutes stirring constantly to prevent the rice from scorching. Arrange the fried rice, longanisa and eggs in a serving plate and serve while hot.

Top the meats with onion. Preheat oven to 375 degrees Fahrenheit. Pour the sauce over the meats and onion. Place the baking dish inside the oven and cook for 30 minutes to 45 minutes. Serve immediately.

Some of the ingredients that you will need when you prepare this dish are four cube steaks, a can of mushrooms, a pack of brown gravy, two tablespoons flour and four cups of cooked rice. To enhance the taste or flavor of the viand, do not forget to add the following ingredients, ¼ teaspoon oregano, 1/8 teaspoon garlic, ½ teaspoon salt, two tablespoons oil, 1 ¼ cup water, 1/3 cup wine and a green pepper.

Put the flour, salt, garlic and oregano in a medium size bowl. Heat the oil in the pan. Pour the water and wine into the pan. Add the gravy mix, green pepper and sliced green peppers. Stir the mixture and cover the pan. Change the heat setting to low. Heat the mixture for 30 minutes to 40 minutes. Pour three cups of vegetable oil into a small saucepan. Heat the oil and deep-fry meats. Remove the steaks from the pan and place in a clean plate. Pour the gravy over the meats and serve with the cooked rice. This recipe can serve up to four people. Refrigerate leftovers an hour after cooking to avoid food contamination.

How to Cook Chick Peas

I was first introduced to chick peas way back when salad bars first became a national phenomenon. Seems like a long time ago now, and since then I have enjoyed these tasty, protein-rich legumes cooked (or not) in a tremendous variety of ways. Chick peas go by a lot of names, including garbanzos, garbanzo beans, and (in India) chana or channa. You may also see it spelled as one word, "chickpeas."

In addition to tossing chick peas into your salads, you can cook them in soups and stews; mash some together, roll them into little balls and fry them to make falafel; cook them and grind them into a paste for some home-made hummus; or just roast a pan of them and sprinkle with salt or spices for a quick snack. This merely scratches the surface of the ways that people can and do enjoy chick peas.

The one minor hassle in cooking with chick peas is that you must soak them, preferably overnight, before putting them to use. You can avoid this by buying chick peas in cans, although you'll miss out on the full flavor to be found in fresh chick peas.

Chick Pea Recipe #1

Ingredients

1. 15 ounces (or 1 can) chick peas

2. 4 cups water

3. 2 tablespoons cooking oil

4. 1 onion, chopped

5. 1 teaspoon salt

6. 2 cloves garlic, minced

7. 2 teaspoons ground coriander

8. 1 large green chili pepper, chopped

9. 1 tomato, diced

Directions

1. Combine chick peas, 3 cups water and salt in a sauce pan. Simmer until chick peas are tender. Drain, removing chick peas from pan.

2. Heat cooking oil in the pan. Add onion and fry until onion begins to turn brown, then add garlic, chili pepper and coriander; fry for 5 minutes more.

3. Add tomato. Continue cooking until all liquid is gone.

4. Add chick peas back into pan and cook on low heat for 5 minutes. Add 1 cup water, cover and simmer for 20 to 30 minutes.

5. Remove from heat, stir well and serve.

Chick Pea Recipe #2 (for true garlic lovers!)

Ingredients

1. 2 cans of chick peas

2. 6 to 12 cloves of garlic, minced

3. 1 teaspoon cumin seeds

4. 1/4 cup chicken bouillon

5. 2 tablespoons tomato paste, mixed with 6 tablespoons water

6. 3 or 4 redskin potatoes, peeled and chopped

7. 1 cup water

8. 1 teaspoon salt

9. 1 teaspoon lemon juice

10. 1 teaspoon chili powder

Directions

1. Sautee cumin seeds and garlic in bouillon for 3 minutes. Add tomato paste (diluted with water) and cook for 2 more minutes over low heat.

2. Add chick peas, water, potatoes, salt, chili powder and lemon juice. Simmer for 25 to 30 minutes.

3. Serve with pita bread or crusty French or Italian bread.

Chick Pea Recipe #3 (soup)

Ingredients

1. 4 cups pre-cooked chick peas

2. 6 cups canned (clear) chicken soup or broth

3. 1 onion, chopped

4. 1 medium tomato, diced

5. 2 tablespoons chopped parsley or parsley flakes

6. 4 cloves garlic, minced

7. 1 cup dry macaroni

Directions

1. Preheat a medium-to-large pot. Saute garlic and onion.

2. Add chicken soup, chick peas, tomato and parsley.

3. Bring everything to a boil; cook for 15 to 25 minutes.

4. Add macaroni, cover pot and cook for 20 to 30 minutes more, stirring frequently. Remove from heat and serve.

Filipino Recipes - Estofado Recipe (Beef) - Pinoy Food

Estofado is a special beef recipe that you cannot find during regular days because of the amount of preparation required. It is usually prepared during fiestas and special occasions like weddings, birthdays and reunions that are held during the summer months when school is out. Because the beef is cooked to a chewy tenderness, it is loved by both the kiddies and the oldies. Even if there are a lot of dishes set on the table during special occasions, you will surely find the estofado being the first to disappear because it is so delicious thus making it too hard to resist.

Frying Pan

Ingredients:

Frying Pan

1 kilo boneless beef 2 cups Baguio beans (cut into convenient lengths) 2 small carrots (peeled and quartered) 1 cup chopped tomatoes 2 onions (chopped finely) ½ cup vinegar 2 cloves garlic (pounded) 1 bay leaf 6 small onions (peeled but whole) 1 tbsp flour cooking oil salt and pepper (to taste)

Cooking Procedure:

Rub the beef with flour. Season with salt and pepper to taste. Fry in cooking oil until color turns brown then set aside. Using the remaining oil, sauté the garlic until it turns brown then add the onions and tomatoes. Cover and simmer for about 5 minutes. Place the meat in a pan and cover with tomato mixture, bay leaf, vinegar and a small amount of water just enough to cover the meat. Add salt and pepper to taste. Cover the pan and bring to a boil. Add the 6 peeled whole onions, beans and carrots then allow to simmer. Take out from the pan when the vegetables are cooked. Arrange the beef in a serving platter and surround with the vegetables. Simmer down the sauce to desired quantity and thicken with flour. Pour the sauce over the beef and vegetables then serve.
